Jack-o-Lantern Pancakes
Ok, I admit, I can’t stop making fun breakfast foods for my kids during the holidays. It’s like some sort of addiction. Do they have a group called Pancake Makers Anonymous? Because if so, I may need to join. Last week I shared Frankenstein pancakes and today I’m sharing our Build your own Jack-o-Lantern pancakes.
These were so easy it’s frightening (haha)! I just whipped up an easy pancake batter, (yes store bought and yes “just add water” variety) and I divided the batter into two bowls and added orange food coloring to one and green to the other.
I then cooked the pancakes on a hot griddle and I think it’s pretty obvious what I did with the different colors of batter: Make pumpkins!
And then came the fun part: Decorating! It is safe to say that a lot of my breakfast ideas hit me as I am making breakfast for my kids and sometimes I am not as prepared as I would like. But instead of running to the store in my pj’s and slippers (that would be a scary sight) I just make due with what I have. I was wishing that I had some different berries on hand but I didn’t, so for Jack-o-lantern faces I let my boys decorate with different kinds of chocolate chips, raisins and Craisins. I think you can guess how many raisins and Craisins were actually used. 😉 Did you guess ZERO? Ding, ding, ding, we have a winner.

All of my boys got involved in the fun and I had a hard time getting them to wait just a minute while I took a picture of their creations before eating them.
Even baby thought this was a fun and tasty breakfast idea as he stuffed his cheeks full of chocolate chips:
