White Chocolate Peeps
Confession time. I am not a fan of marshmallows. In fact just thinking about the texture makes me squeamish. Mini ones are okay, but the big jumbo ones make me gag. (Sorry to be so graphic.) I will make one exception and that is only to a marshmallow cooked perfectly brown over a camp fire. It has to have just the right amount of crisp on the outside and gooey on the inside. But…my boys LOVE them. And my boys love Peeps. One thing I have found to be true in my life is that everything is better when it is covered in chocolate and more specifically white chocolate. So, I figured, why not try White Chocolate Peeps.
These are easy to make and only require a few ingredients:
Bunny Shaped Peeps
White Dipping chocolate
Jelly Belly Jelly Beans
Straws or sucker sticks
You can put these on sucker sticks or popcicle sticks, but I love how they look on pattern straws. Or, if you don’t have any of the above, just make them without the sticks.
First you need to melt the chocolate. I do this by putting it in the microwave for small amounts of time until it is smooth. Make sure that you don’t cook it too long or it will burn and get hard. I learned that the hard way.
Then, put a straw in the bunny. You will want to put it about half way up to make sure it does not fall off.
Next, dip the peep into the chocolate and twist until well coated. You can tap on the side of the bowl to allow excess chocolate to come off.
Place on foil, put a jelly bean on for a tail. Then just allow to dry, peel off of the foil and enjoy.
