If you are on a mission to find the perfect homemade brownie recipe (and who isn’t??), look no further! These Marshmallow Brownies will make you never want to buy a box of brownie mix again.
Marshmallow Brownies
When I was young , we were often surrounded by some type of yummy treat. My mom passed her love of baking on to me, and these Marshmallow Brownies quickly became one of my most sought after treats by friends and neighbors. They are gooey, but not too sticky and could possibly make you the most popular house in your neighborhood. *Just a note, these are best when you make them a day before you need them, or at least several hours.
Marshmallow Brownies Recipe
Brownie Ingredients:
- 1 C butter softened
- 2 C sugar
- 1/3 C. cocoa
- 4 eggs
- 1 1/2 C flour
- 2 tsp vanilla
- 1/2 tsp baking powder
- 3/4 C walnuts (optional and I leave them out! Why ruin perfectly good brownies with nuts?? lol! But you can add them if you like. 🙂 )
- 1 lb mini-marshmallows
Preheat oven to 350°. Mix the butter, sugar and cocoa together until fluffy. Add the eggs, one at a time, beating after each one. Add flour, vanilla, and baking powder. Add walnuts if you choose.
Spread mixture into a medium-sized cookie sheet or jelly roll pan that has been greased. Bake for 25 min.
Remove from oven and cover with the mini marshmallows.
Put back in the oven for exactly 3 minutes, not longer or you will ruin them. Cool for one hour and then frost with the following frosting:
Frosting Ingredients:
- 1/3 C. cocoa
- 1/2 C. butter softened
- 1 2/3 C powdered sugar
- 1/3 C. evaporated milk
Mix together and spread over brownies. Let set at least 12 hours before cutting.
And there you have it. These Marshmallow Brownies are simple and delicious, but also addicting! You’ve been warned!

The marshmallow brownie recipe mentions in the ingredient list to use baking powder, but your instructions says baking soda. Which should be used?

What size pan did you use?
I used a sheet pan, and they came out thinner.

I use a jellyroll pan. Not as big as a cookie sheet but bigger than a cake pan.
Just in the middle of making this and wondering if I take them out of the tin to cool? I’m not an experienced baker…. I’m going to leave them in the tin as am worried they will not hold their shape if I take them out.
they smell really good though. Making for my daughter’s orchestra as it’s our turn to bring the post practice snack – hopefully they like it and it’s not too too sweet…
